AESTATIS GSM

Aestatis is an ode to the summer on the Fleurieu Peninsula. This wine reflects the summer in the openly fruity character of the Grenache grape which dominates this Cuvee. Grenache Noir is the archetypal hot climate vine, yielding spicy and sweet grapes, complemented by the more structured Syrah with its hints of black pepper and a tiny bit of dark and gamy Mourvedre.
Barrel-aged for 18 months in 300-liter hogsheads (primarily in used French oak).

OLIVE OIL extra vergin

Finniss River boasts not only extraordinary red wines, but also an outstanding olive oil, thanks to its mineral-rich soil, which provides optimal conditions for olive trees.
Sunny days and cool nights have a tremendous effect on the olives' aromatic development, producing a fine, unusually tangy oil. The smell of fresh-mowed grass prefaces an exquisite lime taste, with a peppery finish.
